Nothing makes me happier than to learn that yet another person who was once diagnosed with a condition that was deemed to be “irreversible” by doctors, has been able to reverse the condition completely!
I started corresponding with Carrie back in 2014 when she reached out to me to let me know that just as I had described in the Hashimoto’s: Root Cause Patient Guide, she was able to get her Hashimoto’s into remission! Best of all she was able to do so in a delicious way!!
Carrie Vitt is the creative genius behind the mouth-watering recipes at Deliciously Organic and the author of the Grain-Free Family Table Cookbook. I was so excited to learn that she has been able to get her Hashimoto’s into remission through the use of food and nutrition, even recovering from heavy metal toxicity induced by an amalgam filling that was removed improperly.
Through organic, unprocessed food her family of four has overcome severe asthma, eczema, Hashimoto’s, irritable bowel syndrome and migraines, all without drugs—just good, natural, real food.
Here’s Carrie’s Hashimoto’s Remission Story (from Carrie)
“A simple trip to the dentist turned my life upside-down. In the spring of 2008, I went to the dentist’s office because of a cracked amalgam filling in one of my teeth. The dentist removed the filling without taking the proper precautions. As soon as I sat up from the chair, I felt terrible and knew something was wrong. I spent a week in bed, gradually regained some of my strength and went on with life.
A few weeks later, I started having problems with my complexion and then developed hives from the neck up that wouldn’t go away. I hadn’t changed anything in my daily regimen, I was on a diet of unprocessed organic foods, and I exercised regularly. I was confused.
Then once morning, I woke up and splashed some water on my face. Immediately my face turned bright red and started burning. “Oh no!” I thought. “It’s the water!” It seemed the chlorine in the water was also making me sick. I talked to my husband, and we tried to figure out our options. In the meantime, I couldn’t touch tap water, let alone drink it. My husband bought large 5-gallon bottles of filtered water, and I sponge bathed for over a month until we were able to install a water filter in our home. It wasn’t cheap, but it helped. At least I could finally bathe again.
My skin cleared a little, but things got worse. Much worse. My hair began falling out; I couldn’t sleep, and I had allergic reactions to nearly everything I ate or came in contact with. If I ate vegetables, I would swell. If I ate meat, I would swell. If I walked into a room with too much perfume, I would swell.
I cried. I became very depressed. I didn’t want to go anywhere and spent all day in bed with ice packs on my face because my skin was burning, red and peeling.
The worst part of this entire ordeal was that I spent nine months going from doctor to doctor without anyone listening or running tests. They kept telling me I had dry skin, would hand me a tube of steroid cream and send me on my way. I’m not an idiot. I knew my skin wasn’t “dry” and I knew I had to dig deeper.
I finally found a doctor who investigated my case, sent me to an allergist and they ordered the required tests. In the spring of 2009, I was diagnosed with Hashimoto’s Thyroiditis.
I was relieved to finally have a diagnosis, but the doctor’s prognosis was unsatisfying. He told me I could take a drug to potentially manage my symptoms, but my thyroid would eventually stop working, and I’d be on medications for the rest of my life. I was already having extreme reactions to almost everything I came in contact with, so I didn’t feel that medication was the right decision for me. I decided to look for another path.
Years before, I had overcome chronic migraines, IBS, and eczema with food, so I had a hunch my eating could play a role in my recovery. I began working with a certified nutritionist to help me get to the root of the problem.
Remember the amalgam filling I had removed and refilled? After many tests, we discovered my thyroid had absorbed heavy metals from the amalgam filling. Consequently, my liver “backed up” so it couldn’t properly filter any toxins my body encountered. This helped explain the hives and the thyroid disorder.
My nutritionist prescribed a Grain-free, nutrient-dense diet and gentle detox therapies. I was also very fortunate to have a supportive family. When they learned of my need to drastically change my diet, my husband said, “If you have to do this, then we do it together.” So my husband and two daughters joined in for the ride, and it’s been a fantastic experience for us all.
After several years of disciplined eating, gentle detox, whole food supplements as prescribed by my nutritionist and hard work, I’m happy to say my disease is in remission. I can’t even tell you how much a Grain-free, nutrient-dense diet has changed my life! I can now spend time with my kids, family, and friends and be an active member of my community.
I know each body is different. I share this information to bring you hope and encouragement. If you’re struggling with chronic health issues, I encourage you to seek out a practitioner who can help guide you toward better health. Even if everyone around you says it can’t be done, follow your instincts. If you think it’s possible, run toward that hope. After my experience, I truly believe that many of the diseases that ail us can be avoided or reversed with the right foods, detox, and support.

Cauliflower and Bacon Hash
I adapted this recipe from husband’s favorite breakfast – potato and bacon hash. I use finely chopped cauliflower in place of the potatoes. The first time I made it my husband was a bit skeptical, but after a few bites he said, “This is amazing!” It pairs well with scrambled or sunny-side-up eggs.
- Serves 4-6
- Preparation Time: 15 minutes
Ingredients
- 6 bacon slices (nitrate-free and pastured preferred), cut into 1/4-inch pieces
- 1 large yellow onion
- 1 head “riced” cauliflower*
- 2 teaspoons Celtic sea salt
Instructions
Place the bacon in a large skillet over medium heat and fry until golden brown, about 5 minutes. Using a slotted spoon, transfer the bacon to a plate. Add the chopped onion to the bacon fat and sauté until translucent, 4 to 5 minutes. Add the cauliflower and salt. Cook for about 10 minutes, stirring occasionally until the cauliflower has softened and some pieces are just beginning to turn golden brown on the edges. Stir the bacon into the cauliflower mixture and serve.
*Cut the cauliflower into 2-inch pieces. Place half the cauliflower in the food processor and pulse for seven or eight 1-second pulses, or until the cauliflower pieces are about the size of grains of rice. Pour into a medium bowl. Repeat with the remaining cauliflower.

I have Lupus, and I too had problems after my mercury fillings on the right side were removed with no proper precautions. And my dentist didn’t even inform me of any risks of the procedure.
After the procedure, I noticed my Lupus symptoms greatly increased. It seemed too coincidental that it was after this dental procedure, so I googled it, and sure enough I found that there are proper HAZMAT procedures that should be performed for removal of mercury fillings. And these procedures are to protect both the patient AND the dental crew performing the procedure. My dentist used NO special precautions, and when he wanted to remove the mercury fillings on the other side, I basically said Hell no and told him why and that I didn’t appreciate him not even informing me of the risks. He basically told me that he did not have time to have discussions like that with all of his patients. I told him he could have at least provided me a brochure. I couldn’t believe it.
If you google mercury-free dentistry, you will find an organization (maybe more than one now) of dentists that conduct SAFE procedures when dealing with mercury fillings. If you look at some of the informational pictures, you will see that they have specialized equipment and hazmat clothing! The one guy who founded one of the main organizations made a video of a demo he did for an ADA panel regarding mercury exposure and dental care. If you find it, watch it. He used a special device (kind of like a geiger counter) to measure how much mercury was disturbed/exposed and put into the air after simply brushing a set of fake teeth with mercury fillings for a few seconds. It was eye-opening. Think about that, and then also consider if you have mercury fillings and you are a nighttime tooth grinder how much mercury you are releasing into your system with that too…

That was my thinking too; why bother mentioning ‘gentle detox’ and the fact that the dentist didn’t follow the right protocol for removing the amalgam if you’re not going to explain what exactly is the correct protocol and explain what the gentle detox methods are? That info is key to the story if the rest of us are to follow it.

Izabella, I am very interested in the dental symptoms of Hashimoto’s and would like to ask certain questions around specific teeth, that I feel plays a roll. Is there a platform where I can communicate this as I understand that this is not it?

Rita – thank you for reaching out. I am not aware of a specific forum in regards to Hashimoto’s and teeth. I do suggest that you join several of the Hashimoto’s groups that are out there. A couple of years after my diagnosis, I found Hashimoto’s 411, a closed Facebook group run by Alice Berry McDonnell. This group is amazing! It is comprised of an army of highly motivated, smart, supportive women and men (now 70,000+ strong), and each of them sharing ideas of what worked for them, things they were planning to try, and offering support to one another.

As an 8 month baby I was poisoned with teething powders which contained Mercury . This has caused me many problems during my life , namely having to have total knee replacements, total shoulder replacements & both knee caps resurfaced. My body still contains mercury & I have Hashimoto disease .
Any suggestions please ?

Carole – thank you for reaching out and sharing your journey. I am so sorry to hear this happened to you! <3 I highly recommend that you work with a functional medicine clinician to be a part of your own health care team. It’s an entire medical specialty dedicated to finding and treating underlying root causes and prevent serious chronic disease rather than treating individual disease symptoms. I believe that everyone needs to find a practitioner that will let him/her be a part of the healthcare team. You want someone that can guide you, that will also listen to you and your concerns. You want someone that’s open to thinking outside of the box and who understands that you may not fit in with the standard of care. It's a good idea to ask some standard questions when contacting a new doctor for the first time. Something else to consider is you can work with a functional doctor remotely, via Skype. You could also contact your local pharmacist or compounding pharmacy, who may be able to point you to a local doctor who has a natural functional approach. But I encourage you to keep looking for the right one for you! Here are some resources you might find helpful.
